Due to the higher cost of copper plumbing and installation, it would not be cost-effective to use home runs for each fixture. However, in principle, running all connections back to a single source would work well. The reason it is more common with flexible tubing is simply that the installed cost of the tubing is less and it eliminates possible sources of leakage or flow reduction along the way. Manifolds are also commonly used in radiant floor heating systems where control over each circuit is required.
