How To Replace Molded Bathroom Floor Joists

My beautiful home was built in 1947 but the bathroom floor is soft and uneven due to water leakage from the sealant around the toilet that has been broken and from the leaky shower. We've had 3 estimates done and they range around $3,000.00. This is quite expensive. My husband and I are very handy and love "Do It Ourselves" projects. Any suggestions on how to remove the flooring and replace the wood that has molded and restore the floor to an even surface?
