You are correct that simply cutting out intermediate supports could lead to structural failure. Trusses are precisely engineered to support the roof dead and live load. If you're in the UK, chances are your roof is slate, concrete or clay tile. This material is heavy and requires adequate support. It may be possible to reorient some of the intermediate supports to give you more office space in your attic, however any such changes should be done only after a licensed structural engineer has run calculations based on your actual conditions.
