Either 1/2" or 5/8" wallboard is suitable for studs on 24" centers. The wallboard can be applied either horizontally or vertically. Given the small incremental cost of 5/8" wallboard, we prefer it exclusively in custom homes. The extra thickness gives you more substantial walls that are straighter and more quiet. However, if you opt to use thicker wallboard, be sure you account for this when ordering door and window jambs, otherwise you'll end up with gaps between the moulding and the jambs, requiring expensive carpentry work to remedy. If it's not too late, you can also use sound isolation channels on the ceiling to reduce the foot traffic noise above. These work wonders and help significantly to reduce impact noise.
