Air Bubbles in Plaster

There are air bubbles in the plaster on my ceiling. What would cause this? We put a skin coat on top of an exisiting ceiling using joint compound, then we did a 'knock-down' texture on top of the skin coat. The existing ceiling was painted, but I don't know what kind of paint. The air bubbles appeared in both the skin coat and the final coat. The skin coat appeared to be completely dry.
